Every time I order a steak in a restaurant, no matter how fine the restaurant, I am appalled by the quality of the steak knife. For years, I have simply used my pocketknife instead. I often thought it would be nice to have a pair of folding knives designed and reserved specifically for this purpose. This past year, Goldie and I finally designed such a knife.

Our new knife is offered either individually in a black leather pouch or as a pair in the same style leather pouch but designed to hold two knives. Fits perfectly in your shirt pocket, and the knives are so lightweight that you will hardly know they are there. Send the ugly restaurant knives back to the kitchen and use this perfectly matched set to cut your steak instead of mangling it. The 2 -7/8" drop point blade is high carbon stainless steel at 57-59 Rc. The handles are Ebony Rucarta™ with inlays of black lip mother-of-pearl. The blades can easily be dipped into your water glass and wiped clean on a napkin or washed in warm soapy water when you get home. Please do not put them into a dishwasher! Measures 3-1/2" closed and weighs 1.7 oz. Made in China.

A.G. Russell™ Steak Knife for One Hand Use

This blade was designed for anyone who has the use of only one hand. The basic design of the blade is quite old, going back to the period between 1860 and 1865 when so many men lost an arm or a hand and there was a great need for a knife that could be opened with one hand. Simply hook the end of the blade on a belt loop or pocket edge and open it with only one hand.
