Today, the highest quality kitchen knives are made in Japan. The most commonly used blade steel in these high quality knives is VG-10 stainless. While you will sometimes find kitchen knives with a solid VG-10 blade, most often the blades are VG-10 Damascus, typically with 33 layers of a softer stainless, 16 on either side of a center core of VG-10 which becomes the cutting edge. We have produced two different sets consisting of seven knives in each set using this steel. With a Rockwell hardness of 59-61 Rc., VG-10 makes wonderful kitchen knives, from a large chef's knife to a small paring knife.
With forged bolsters and handles of Corian® or Cocobolo, these knives can become rather pricey. In order to offer the same great steel at a lower price, we have selected three models, a 6" Cook's Knife, a 7-1/2" Santoku and a 3-1/4" Paring Knife, with pakkawood handles and simple blades without the forged bolsters. The knives are simple, the performance is outstanding. As with all kitchen knives, these must not be put in the dishwasher or allowed to set in a sink full of water. Hand wash immediately, dry and store in a block or other device that protects the blade edge. Made in Japan.
